PHENORI/CHIROTI

Phenori/Chiroti is popular konkani sweet recipe which is coated with sugar syrup/sugar powder, you will love the process of making it and enjoy the taste.It is very delicious and is all time favorite of us.
You can store it in air tight container for upto 15 days but I doubt you will even have to do it because the moment the sweet is ready and you start eating ,its over!!!!You will crave for more and more!!
I have coated 10 phenoris with sugar syrup and 10 with sugar powder.
Chiroti
Preparation time : 30 minutes
Rest Time : 1 hour
Serves : 20 phenori/chirotis

Ingredients
For the dough
Maida/All purpose Flour - 2 cups
Ghee/Melted Butter - 3 tbsp
Salt - Pinch
Water - approx 3/4 cup
Rice Flour - 2 1/2 tbsp
Ghee - 2 1/2 tbsp
Vegetable Oil for frying

For Sugar Syrup
Sugar - 1/4 cup
Water - 1/2 cup
Cardamom - Pinch for flavor

For Powdered sugar
Confectioners Sugar - approx 1/2 cup
Cardamom - Pinch for flavor

Preparation
For the dough
  • In bowl add maida, ghee, salt and mix well. Now add little water as required and start kneading it to form smooth dough.Cover it and keep it aside for 1 hour.
  • After 1 hour Add rice flour, ghee in bowl and mix well.This is used to bind the layers while rolling.
  • Divide dough into 6 equal portions. Make thin rotis out of it.
  • Place one roti , spread rice flour- ghee paste onto it. place another roti on top of it, again spread the rice flour-ghee paste and place the third roti and again spread the rice flour - ghee paste.Now roll them and cut into thick circles. that is you can make 10 circles out of 1 roll. Repeat the process for other 3 rotis.
  • Now using the rolling pin roll each thick circle into small thin circle.
  • Heat the oil in pan.Once the oil is hot place 3 to 4 rotis at time and switch the flame to medium.flip them and fry on both the sides till you see that its golden in color and crisp. place them in paper towel.
  • Immediate after frying  coat them with powdered sugar or sugar syrup. do not use both for one!! That means the powdered sugar or sugar syrup must be ready before frying.
For Sugar syrup
  • Heat water and sugar in pan. continue this process till sugar is melted, then simmer the flame and continue till you get single thread consistency(does not break when your forefinger and thumb is pulled part gently).Add the cardamom powder and mix well. If this gets thickened by the time you finish frying if you can always add little water and heat again.
For Sugar powder
  • You can use the store bough confectioners sugar and add cardamom and mix well or you can powder the sugar and cardamom and mix well.
Tip:
  • Use only one type of coating for each chiroti.
  • See that oil is hot and you fry them in medium flame.
  • Coat the chirotis immediately after frying.
