ALOO PARATHA

Aloo Paratha is very popular Indian bread recipe were the paratha is stuffed with aloo mixture. This aloo mixture can be made as per the taste you like, that is it can be spicy, tangy... This can be served for breakfast/lunch/dinner. Preparation time : 20 minutes
Serves : 6 parathas

Ingredients
For the dough
Whole wheat flour - 1 cup
All purpose flour/maida - 1/2 cup
Sugar - 1/2 tsp
Salt - 1 tsp
Warm water - approx 3/4 cup

For the Aloo Mixture
Potatoes - 3
Onion chopped - 1
Garlic chopped - 3
Green chilis chopped - 3
Vegetable oil - 1 tbsp
Cumin seeds -  1tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tsp
Asafoetida/hing - big pinch
Red chili powder - 1tsp
Chat masala - 1/2 tsp
Coriander leaves chopped - 5 strands
Salt to taste
Ghee/oil - to cook the parathas
Butter

Preparation
For the dough
  • Mix all the ingredients mentioned in 'for the dough' adding little by little waterand knead it well to form soft smooth dough. keep it aside.
For the Aloo mixture
  • You can boil the potatoes and mash them or peel and cut the potatoes, microwave for 6 minutes and then mash them.
  • Heat oil in pan. add cumin seeds , turmeric powder and saute for few seconds. add onion, garlic green chili and saute till translucent. add mashed potatoes, salt, hing, chili powder, chat masala, coriander leaves and mix well. allow the mixture to cool down.
Prepare stuffed parathas
  • Dust the working surface.Divide the dough into 6 equal portions and roll each into circle of 4 inch diameter.
  • Place little stuffing at center of circle. Bring all the sides together at the center and seal them tightly. Roll again into circle of 6 to 8 inch diameter.
  • Heat tava. drizzle ghee/oil . cook the parathas on both the sides till they are golden brown in color.
Aloo Parathas are now ready. Add the butter on top of each parathas(optional) .serve hot and enjoy.
