CHOLE BHATURE

Chole Bhature is combination of chickpeas and fried bread called bhature is popular punjabi recipe. Chole is little spicy and goes well with this bread and can be served for lunch/dinner/breakfast. There are different ways in which this bhature can be prepared.I have used all purpose flour, wheat flour and sour cream in my recipe. We just love it. Its worth try.

Preparation time : 1 hour 30 minutes
Serves : 12 medium size bhatures

Ingredients
For the Bhature 
All Purpose flour/Maida - 1 cup
Wheat Flour - 1/2 cup
Sooji/Semolina - 2 tbsp
Sour cream - 2 to 3 tbsp
Warm Water - 1/2 cup
Baking Powder - 1/2 tsp
Vegetable Oil - 3 tbsp
Salt to taste

Chole Masala/Chickpeas Masala
Vegetable Oil for frying bhatures

Preparation
  • Add all the ingredients mentioned in 'For the bhature' in bowl and mix well. knead it 4 to 5 minutes to form smooth dough. see that dough does not stick to your hands.
  • Coat the dough with oil, cover it with warm towel and let it rest for atleast 1 hour.
  • Meanwhile you can prepare Chole Masala/Chickpeas Masala
  • Heat the oil in pan in medium-high flame for frying.see that atleast 40 %of pan is covered with oil.
  • Divide the dough into 12 equal portions. Dust the working surface if required.
  • Using rolling pin roll the dough into medium  circle or oval shape whichever is easy for you. 
  • When the oil is hot drop the bhatura one at time and press at the sides so that it fluffs from center.       (If the oil is not hot bhatura would become hard and not taste good)
  • Flip and fry on other side. see that its golden brown on both the sides. Transfer it to paper towel.Repeat the process.
  • Bhature is now ready. Serve this with Chole Masala/Chickpeas Masala and enjoy.
Tip:
Oil should not be too hot or too cold.  If its too hot the bhatures would turn dark brown.If its too cold it will absorb oil. So it is better if you have it cooked in medium-high flame.
