SPICY VEGETABLE STIR FRY

Spicy Vegetables Stir fry is healthy, delicious dish that can be served for lunch/dinner with rice.This is my favorite of all time and is very easy to prepare.Use fresh vegetables and vegetables of your choice.I love garlic so I like to add it more in my recipe. You can always vary the amount as per your choice.

Preparation time : 30 minutes
Serves : 3 to 5

Ingredients 
Onion - 1
Garlic cloves - 10
Mushroom - 6
Broccolli - 12 florets
Tofu - 1 cup
Cabbage - 1 cup
Carrot -1
Capsicum - 1/2
Small Green chili - 2
Ginger grated - 1 inch
Green Peas - 1/3 cup
Potato - 1
Coriander leaves - 5 strands
Dry Red chili - 3 to 4
Soya Sauce - 2 tsp
Worcestershire sauce - 2 tsp
Sriracha Chilli Sauce - 1 tbsp
Tomato Ketchup - 1 tbsp
Black Bean paste - 1/3 cup
Salt to taste
Olive/Vegetable oil - 2 tbsp

Preparation
  • Heat oil in pan. add garlic cloves and onion and saute till it becomes translucent.
  • Add ginger, garlic, green chilis, dry red chilis, potatoes and saute it for 2 to 3 minutes.
  • Now add all the remaining vegetables and saute it for  5 to 8 minutes till the vegetables are tender crisp.
  • Add the black bean paste, ketchup, soya sauce, worcestershire sauce, chilli sauce, coriander leaves, salt to taste and mix well till everything is well combined.
  • Spicy Vegetables Stir Fry is now ready. serve hot with rice and enjoy.


Tip:
  • For the black bean paste grind the canned black beans adding very little water and form smooth thick paste.
  • Vary the amount of sauces and spices as per your taste
