Vegetarian Tagine is very healthy, delicious dish that can be served with Rice/ Potato rice/Persian Rice. I had it for the first time in Mediterranean Restaurant and was in love with it. Prepared using vegetables and spices. do try this out and share your comments.

Ingredients
Mushroom - 5
Carrot - 1
Capsicum - 1/2
Broccoli - 12 florets
Potato - 2
Zucchini - 1/2
Red chili Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Tomato paste - 2 tsp
Olive Oil - 2 tbsp
Salt to taste
For the Paste
Coriander seeds - 1 tbsp
Cumin seeds - 2 tsp
Dry Red chilis - 4
Cinnamon stick - 1 inch
Black Peppercorns - 10
Cloves - 2
Cardamom - 3
Onion - 1
Tomato - 1
Garlic cloves - 5
Ginger - 1
Green chilis - 2
Maggie cube/Bouillon - 1

Preparation
- Grind all the ingredients mentioned in 'For the paste' adding little water to form smooth paste.
- Heat oil in pan. add the ground paste and bring it to nice boil in medium flame till the raw smell goes off.
- Add mushrooms, carrot, capsicum, potato, broccoli, zucchini and saute it for 2 minutes.
- Now add chili powder, turmeric powder, salt to taste, tomato paste, water for desired consistency mix well . cover the pan with lid and in medium flame allow it to cook for 8 to 10 minutes till you get nice flavor and vegetables are cooked.
- Veg Tagine is now ready. serve hot with rice and enjoy.
Tip:
- Use vegetables of your choice.
- vary the amount of chilis as per your taste
