HOMEMADE STRAWBERRY BUTTERCREAM

Strawberry butter cream is my all time favorite frosting which can be used for cakes, cupcakes and it tastes just awesome. I have prepared this using strawberry compote and used it in my strawberry cake recipe.
Preparation time : 20 minutes
Serves: fill one 8-inch cake

Ingredients
Egg whites - 6
Granulated sugar - 1 cup
Confectioners Sugar - 1 cup
Butter(room temperature) - 3 sticks
Vanilla extract - 1 tsp
strawberry compote - 3/4 cup

Preparation
  • In large bowl over boiler, whisk together egg whites and granulated sugar and stir continuously till it reaches 115 degree F and sugar is completely dissolved.
  • Transfer this to mixer and whisk this until it is thick and white in color.
  • Now add the confectioners sugar, continue the process till you get stiff peaks. Once sugar is incorporated add the butter sticks one by one. 
  • Once its creamy add vanilla extract, strawberry compote and mix.
  • Strawberry butter cream is ready. Use it on cakes, cupcakes and enjoy.
