STRAWBERRY CAKE

Today I am going to write a simple recipe on strawberry cake prepared using strawberry compote and filled with strawberry butter cream frosting prepared for my hubby. Try this, surprise your dearest one and enjoy.

Preparation time : 50 minutes
Serves : one 8 inch cake

Ingredients
Baking powder - 1 tsp
All purpose Flour - 1 cup
Sugar - 1/4 cup + 1 tbsp
Salt - 1/4 tsp
Vegetable Oil - 1/8 cup
Egg white - 3
Egg Yolk - 3
Vanilla Extract - 1 tsp
strawberry compote - 1/2 cup
Sugar - 1 tbsp for meringue

Preparation
  • In large bowl add 3 egg whites , 1 tbsp sugar and beat till you get medium to stiff peaks.(this is the meringue)
  • In another bowl add all purpose flour, baking powder, salt and mix well.then add sugar, oil, vanilla extract, egg yolks, compote and whisk them to combine well.
  • Fold the meringue gently into the batter in thirds.
  • Preheat the oven for 350 degree F and grease your cake pan with oil and flour and parchment paper.
  • Pour the cake batter and bake for 30 to 35 minutes or till done(that is insert knife at the center and if it comes out clean it means cake is done)
  • First allow it to warm , remove from pan and then allow it to cool down completely even before you start frosting the cake.
  • Using long serrated knife cut the cake into two equal halves and fill it with frosting.
  • Strawberry cake is ready. Serve and enjoy!
