SPICY POTATO QUINOA

Quinoa is good source of protien,fiber and iron and gluten free grain that can be used for breakfast/ lunch/ dinner. I have prepared a dish that can be served for lunch or dinner and goes well with Thai Coleslaw. I have used Red Quinoa. You get this available in stores like  fresh thyme, walmart.

Preparation time : 20 minutes
Serves : 2

Ingredients
Garlic Cloves chopped - 2
Potato cubed - 1
Quinoa - 1 cup
Water - 2 cups
Dry Red chilis - 2
Maggi veg cube/bouillon  - 1
Coriander leaves - 5 strands
Red chili Powder - 1 tsp
Black pepper Powder - 1/4 tsp
Vegetable Oil - 1 tbsp
Salt to taste

Preparation
  • Rinse and drain well the quinoa in cold water until it runs out clear
  • Heat Oil in pan.Add potatoes and garlic cloves and saute it for 2-3 minutes.
  • Crush and add the dry red chilis, maggi cube and mix well.
  • Add red chili powder, pepper powder, salt to taste, quinoa, water , coriander leaves and mix well.
  • Bring it to boil. Reduce to simmer, cover pan with lid,and cook until grain is translucent and germ is spiraled out from each grain . This takes about 15-20 minutes.
  • Spicy Potato Quiona is now ready. Serve hot with  Thai Coleslaw and enjoy.
