KOLMBO/SAMBAR

Kolmbo is konkani dish prepared using vegetables and spices.This is spicy curry and can be served with plan rice. It is also called udupi sambar.You get the sambar powder readily available in stores. I have prepared it from the scratch. Try this simple recipe.

Preparation time : 30 minutes
Serves : 5

Ingredients
(Cut vegetables into cubes)
Medium Onion -1
Potato - 1
Cauliflower florets - 12 to 15
Capsicum - 1
Carrot - 1
Toor dal - 3/4 cup
Salt to taste
Corriander leaves - to garnish

For the powder
Dry Red chilli - 10 to 12
Corriander seeds - 2 tbsp
Methi seeds - 1/4 tsp
Cumin seeds/jeera - 1 tsp
Channa dal/dried channa - 1 tbsp
Hing/Asafoetida - 1/4 inch or 1/2 tsp powder

For the tempering(optional)
Coconut Oil/vegetable Oil- 1 tbsp
Mustard seeds - 1 tsp
Curry leaves - 6

Preparation
  • Wash and pressure cook toor dal for at least 3 whistles. for 3/4 cup of toor dal add at least 3 cups of water.
  • Dry roast the ingredients mentioned in 'For the powder' till you get nice aroma and then grind to form fine powder.Keep this aside.
  • Whisk the cooked dal , add all the vegetables and bring it to boil.
  • Now add the dry powder, water, salt and bring it to boil again.
  • Once it starts boiling add either 1 tbsp of oil to sides or add tempering.switch off the flame.Garnish it with coriander leaves.
  • Kolmbo is now ready. Serve hot with rice and enjoy.
Tip:
  • Amount of water you need to add depends on the consistency you desire. We like it in medium consistency.
  • You can add vegetables of your choice.
  • Add 1 tsp of chili powder if you want it very spicy.
