THUKPA

Thukpa is Tibetan noodle soup. It is very simple to prepare, delicious, healthy and one of my favorite. Try this awesome soup recipe and do share your comments.
Soup
Preparation time : 20 minutes
Serves : 3

Ingredients
Mushrooms chopped - 5
Vegetable Oil - 2 tbsp
Asafoetida/Hing - pinch
Turmeric Powder - 1/2 tsp
Carrot chopped - 1
Capsicum chopped - 1/2
Cabbage chopped - 1 cup
Coriander leaves - 5 strands
Noodles - 50 to 70g  (I have used Reggano angel hair pasta)
Maggi cube/bouillon -1
Salt to taste

For the paste
Onion - 1
Garlic cloves - 3
Ginger - 1 inch
Green chilis - 3
Red chilis - 2
Tomato - 1
Peppercorns - 5

Preparation
  • Grind all the ingredients mentioned in 'For the paste' until everything is well combined to form a smooth paste.
  • Heat oil in pan. Add the mushrooms and saute till cooked.
  • Now add the ground paste,hing, turmeric powder, salt to taste, maggi cube and  little water for desired consistency and cook for about 5 minutes till the raw smell goes off.
  • Meanwhile cook the noodles according to the instruction given in package , drain them and keep it ready.
  • Add cabbage, carrot, capsicum,coriander leaves and cook until vegetables are just tender. Finally add cooked noodles and mix everything well.
  • Thukpa is ready. Serve hot and enjoy
