VEG MAKHANI

Veg Makhani  is very rich and creamy dish mixed with vegetables and can be served with Rice/Bread. This is prepared using cream, cashew , spices  and vegetables of your choice.
Preparation time : 30 minutes
Serves : 4

Ingredients
For the Masala
Cumin seeds/jeera - 1 tsp
Coriander seeds - 1 tsp
Broken cashews - 1 tbsp
Cardamom - 4
Cloves - 2
Cinnamon - 1/2 inch
Onion roughly chopped - 1
Ginger - 1 icnh
Green chili chopped - 5
Garlic cloves chopped  - 5
Turmeric Powder - 1/4 tsp
Pepperccorns - 2
Dry Red Chili - 2
Vegetable Oil - 1 tbsp

For the Makhani Gravy
Cauliflower - 10 florets
Potato chopped  - 2
Capsicum chopped - 1
Asafoetida/hing - small pinch
Vegetable Oil - 1 tbsp
Red chili powder -1 1/2 tsp
Tomato Ketchup - 3 tbsp
Turmeric Powder - small pinch
Broken cashews - 1 tsp
Sugar - 1/8 tsp
Green peas frozen - 1/3 cup
Cream - 1/4 cup
Dried and crushed kasoori Methi - 1/4 tsp
Salt to taste
Coriander leaves chopped - 3 strands
Butter and cream to garnish

Preparation
For the masala
  • Heat oil in pan. add cardamom, cloves, cinamon, cumin seeds, coriander seeds and saute for a minute.
  • Add cashews, onion, ginger, green chili, garlic, peppercorns, turmeric and red chili and saute till onion becomes translucent.
  • Once this cools down grind it to form smooth paste adding little water.keep this aside.
For the Makhani gravy
  • Heat oil in pan.add potatoes and saute for two minutes(till it starts becomes light golden in color).
  • Now add cauliflower and saute for a minute. then add capsicum and saute for another minute.
  • Add the ground paste, chili powder, tomato ketchup,turmeric powder, cashew , sugar, green peas, salt to taste, little water if required and bring it to boil.
  • Add cream, coriander leaves and kasoori methi and cook for another minute or two.
Veg Makhani is ready. garnish it with butter and cream. Serve hot and enjoy.
