SPICY GREEN FRIED RICE

Spicy Green Fried Rice is very spicy, delicious rice recipe prepared using green paste, vegetables and other spices. If you are looking for something spicy  or If you are spicy food lover do try this out. I am sure you will love this and crave for more and more. I have used jasmine rice. You can use left over rice/basmati rice

Preparation time : 30 minutes
Serves : 4

Ingredients
Raw Rice - 2 cups
Carrot - 1
Capsicum - 1/2
Cabbage - 1/2 cup
Frozen Green peas - 1/4 cup
Tofu cut into cubes - 1/2 cup
Coconut milk - 1/2 cup
Mushroom - 4 oz
Coriander powder - 1 tbsp
Cashews - 1 tbsp
Bouillon /maggie cube - 1
Tomato ketchup - 1 tbsp
Worcestershire sauce - 1 1/2 tsp
Soya sauce - 2 tsp
Salt to taste
Vegetable Oil - 2 tbsp

For green paste
Coriander leaves - 1/2 cup
Lemon juice - 2 tbsp
Brown sugar - 2 tbsp
Cumin - 1 tsp
Green chilis - 5 to 7
Garlic cloves - 8
Ginger - 2 inch
Onion - 1
Habanero - 1 (optional)

Preparation
  • Cook the rice according to package instruction and drain them well.
  • Grind all the ingredients mentioned in 'For green paste' adding little water to form thick smooth paste.
  • Heat oil in pan.add cashews and saute till light in color. now add ground paste , bouillon , coriander powder and bring it to nice boil. 
  • Add carrot, capsicum, mushroom  and saute for minute. then add cabbage, green peas and saute for few more seconds
  • Add tomato ketchup, soya sauce, Worcestershire sauce, coconut milk, tofu ,salt as per taste and mix well and saute for minute to two.
  • Now add the cooked rice and toss till everything is combined.
  • Spicy green Fried Rice is now ready. serve hot and enjoy.
Tip:
You can vary the amount of green chilis depending on how spicy you like to have.
