Spinach Garlic Rice/Palak Lasun Rice is healthy, nutritious and flavorful rice recipe prepared using spinach and garlic.I have used jasmine rice for this recipe. You can use left over rice/basmati rice.

Preparation
- Cook the rice according to the package instructions adding little salt and drain them . keep it aside.
- Wash the spinach in hot water and keep it aside.
- Grind spinach, 6 garlic cloves, ginger and green chili together adding very very little water to form thick smooth paste.
- Heat oil in pan. add remaining chopped 6 garlic loves and saute in medium flame till it turns light in color. add onions and saute till it becomes translucent.
- Now add ground paste, salt to taste, lemon juice and bring it to nice boil for about 3 to 5 minutes in medium-high flame.
- Add cooked rice and toss till everything is well combined.
- Spinach garlic Rice is now ready. serve hot with tomato ketchup and enjoy.
