ROSEMARY FOCACCIA

Rosemary Focaccia is flat oven baked Italian bread topped with Rosemary, Olive oil and salt. You can always top it with your favorite herb or any other ingredients like onions, tomato, olives. This bread is very tasty,flavorful can be served alone, with soup, pasta or salad.
I just love the way the bread looks and process of making this read is even beautiful I enjoy it. Full of dots and dots created using fingers. Homemade breads are always tastier as we have control over all the ingredients that goes into it. Do try this out share your comments, variations.

Total Preparation time : 1 hour + 3 hour for rising
Serves : 15 focaccia squares

Ingredients
Warm water - 1 1/2 cup
Active dry yeast - 1 packet (1/4 oz)
Sugar - 1 tsp
Salt - 2 tsp + 1 tsp
All Purpose Flour - 4 cups
Olive oil - 1/2 cup + 1 tsp + 1/4 cup + 2 tsp  ( dough + bowl +baking sheet + seasoning)
Fresh Rosemary chopped - 2 tbsp

Preparation
  • In big bowl add warm water and sugar and allow it to dissolve. Now sprinkle the yeast and leave it undisturbed for 10 minutes. That is till it forms foam or bubble.
  • Add the all purpose flour, 2 tsp of salt, 1/2 cup of olive oil and mix well using until the dough comes together.
  • Dust the working surface . transfer the dough and knead it for atleast 6 to 8 minutes till the dough comes together like a soft and smooth ball.
  • Coat the bowl with tsp of olive oil. transfer the dough  and flip it once so that the dough is fully coated with olive oil. cover it with warm towel and allow it to rest in warm place for 2 hour or till it is doubled.
  • Coat your baking sheet with 1/4 cup of olive oil. Transfer the dough to this baking pan and start pressing with your hands till the dough fits the baking pan. flip the dough during this process so that the entire dough is coated with the olive oil. continue pressing till it fits the pan.
  • Now using your fingers make the impressions/dots . that is just press down all the way through the dough. Cover this with plastic wrap and allow it to rest it in warm place for about 1 hour or until it is doubled.
  • Pre heat the oven to 425 degree F. Sprinkle 1 tsp of salt and 2 tsp of olive oil and 2 tbsp of rosemary on top of the dough and bake for about 20 minutes till it is golden brown in color. Allow it to cool for 10 to 15 minutes.
  • Rosemarry Focaccia is now ready. Cut them into squares when serving and enjoy.
