TOMATO ONION RICE

Tomato-Onion Rice is South Indian style of rice preparation.If you have left over rice and  are looking for something very quick then do try this out. Basic ingredients from your kitchen and rice is done. This rice can be served  alone or with raita/chips.

Total Prep Time : 20 Min
Serves : 3-4

Ingredients
Rice - 1 cup
Onions Chopped - 1
Tomatoes - 1
Ginger grated - 1 piece
Garlic Chopped - 3
Green Chillies - 3
Garam Masala Powder - 1 tsp
Turmeric powder - 1/2  tsp
Chilli powder - 1 tsp
Coriander Powder - 1 tsp
Tomato ketchup - 2 tbsp
Cashews  - 1 tbsp
Cumin seeds - 1 tsp
Urad Dal - 1tsp
Channa Dal - 1 1/2 tsp
Dry Red chilis - 2
Coriander Leaves - 5 strands
Vegetable Oil - 2 tbsp
Salt to taste

Preparation:
  • Use left over rice or Cook the rice according to package instructions.I have used jasmine rice.
  • Heat Oil in pan and add cumin seeds and cashews, dry red chilis, urad dal and channa dal and saute for a minute till it turns light brown in color.
  • Add onion, garlic, ginger and green chillies and cook till they become translucent.
  • Add tomatoes and cook until tomatoes turn pulpy.
  • Add chilli powder, garam masala powder, tomato ketchup , coriander powder , turmeric powder ,salt to taste and cook on medium flame for 3 to 4 minutes.
  • Now add rice and mix well till everything is combined.Garnish it with coriander leaves.
  • Tomato Onion rice is now ready. serve hot with plain yogurt or raitha and crispy potato chips on side.
