Yellow Thai Curry is another delicious Thai curry recipe prepared using thai curry paste and vegetables of your choice. This dish can be served with Rice. I love thai food and this is one of my favorite and healthy too. Do try this out and share your comments

Serves : 3 to 4
Ingredients
Coconut Oil/Vegetable Oil - 2 tbsp
Carrot - 2
Mushroom - 4 0z
Tofu - 4 oz
Cabbage - 1 cup
Capsicum - 1/2
Fresh Basil Leaves - 8
Coconut Milk - 13 Fl Oz
Green Peas - 1/4 cup
Salt to taste
For the yellow curry paste
Onion - 1
Ginger - 1 inch
Green chilis - 5
Garlic cloves - 5
Coriander seeds - 1 tbsp
Cumin seeds - 1 tsp
Soya Sauce - 1 tbsp
Turmeric powder - 1 tsp
Lemon juice - 1 tbsp
Preparation
- Grind all the ingredients mentioned in 'For the yellow curry paste' adding little water to form smooth paste.
- Heat oil in pan. add the yellow curry paste, bouillon and bring it to nice boil for about 5 to 8 minutes till the raw smell goes off.
- Add the carrot, cabbage, capsicum, mushroom, green peas and boil it for 1 to 2 minutes
- Add the coconut milk, tofu, adjust the salt and water for desired consistency and basil leaves and bring this to very nice boil in medium flame so that you get very nice flavor.
- Yellow Thai curry is now ready. Serve hot with rice and enjoy.
