MEXICAN SANDWICH

Mexican sandwich is simple, healthy delicious sandwich prepared using black beans and mushroom. The flavors that comes out of this sandwich is just amazing. Its worth try.Prepare this sandwich and serve with side of fries and I am sure it will be a hit.I have used Japanese milk bread for this sandwich.

Preparation time : 15 minutes
Serves :  4

Ingredients
Bread slices - 8
Butter for toasting the bread
Sour Cream - 4 tsp to spread on the bread
Medium Onions chopped lengthwise - 2
Garlic cloves finely chopped - 8
Canned Black Beans - 16 oz
Mushroom chopped - 8 oz
Mexican Hot sauce - 2 tsp (I have used Valentina hot sauce)
Tomato ketchup - 2 tbsp
Cayenne Pepper powder - 3/4 to 1 tsp
Mexican Cheese Blend - 3 tbsp (optional)
Coriander leaves chopped - 3 tbsp
Salt to taste
Vegetable Oil - 2 tbsp to saute the mushrooms, onions

Preparation
  • Heat tbsp of oil in pan. add the onions and saute till it is caramelized.transfer this to plate.Keep this aside.
  • Heat tbsp of oil again in pan. add the mushroom and saute them. once its cooked add the garlic cloves and saute for a minute.then add the black beans and mix well.
  • Add Mexican hot sauce,tomato ketchup, salt to taste, cayenne pepper , coriander leaves and saute for minute. Slightly mash this mixture and saute for another 2 minutes. Switch off the flame.
  • Heat the pan. place two bread slices and toast them using butter on both the sides.
  • Spread the sour cream on the top or bottom bread.then spread the mushroom and beans mixture prepared, then add the caramelized onions on top of it and then sprinkle the Mexican cheese blend. finally sandwich it using another toasted bread slice.
  • Mexican Sandwich is ready. Serve hot with side of fries and enjoy.
