MOONG DAL KOLMBO/SAMBAR

Moong Dal Kolmbo is dish prepared using vegetables, moong dal and spices. Its traditional konkani dish prepared using toor dal. Today I have given a twist by preparing using moong dal and I must say it tastes awesome.This can be served with plain rice/ any variety of dosas.
You can always use store bought sambar powder for this recipe. If not available , I have also given a recipe below on how to prepare sambar powder at home.

Sambar
Preparation time : 30 minutes
Serves : 5

Ingredients
Moong Dal - 1 cup
Ginger grated - 1 inch
Salt to taste
Onion chopped - 1
Potatoes chopped - 2
Capsicum chopped - 1
Black Beans - 16 oz
Sambar Powder - 4 tbsp
Coriander leaves - for garnishing

For the tempering
Dry red chillis - 2
Asofoetida/Hing - Big Pinch
Garlic cloves - 3
Coconut Oil - 1 tbsp
Curry leaves - 5 to 6
Mustard seeds - 1 tsp
Turmeric powder - 1/2 tsp
Vegetable Oil - 1 tbsp

Preparation
  • Pressure cook moong dal along with grated ginger for 2 whistles. for 1 cup of moong dal add at least 2 to 3 cups of water. whisk the cooked moong dal.
  • In a bowl add sambar powder,very little water and mix well. add this to the cooked moong dal along with onions, potatoes, capsicum and salt and water for desired consistency and cook for about 5 minutes.Bring it to nice boil.
  • Heat oil in another pan.Add mustard seeds. when it starts to splutter add all the other ingredients mentioned in 'For the tempering' and saute for 2 minutes. Add it to the kolmbo prepared above.
  • Moong Dal Kolmbo is now ready. Garnish it with coriander leaves. Serve hot and enjoy.
Homemade sambar powder recipe:
Dry Red chilli - 10 to 12
Corriander seeds - 2 tbsp
Methi seeds - 1/4 tsp
Cumin seeds/jeera - 1 tsp
Channa dal/dried channa - 1 tbsp
Hing/Asafoetida - 1/4 inch or 1/2 tsp powder
  • Dry roast the ingredients mentioned above till you get nice aroma and then grind to form fine powder. You can use this powder if you do not have the ready sambar powder
Tip:
  • Amount of water you need to add depends on the consistency you desire. We like it in medium consistency.
  • You can add vegetables of your choice.
  • Add 1 tsp of chili powder if you want it very spicy.
