YELLOW SQUASH DOSA/PANCAKE

Yellow Squash Dosa/Pancake is simple,soft,tasty and healthy dosa/pancake prepared using rice, squash and coriander leaves.Serve this dosa with butter / Jalapeno chutney.

Ingredients
Yellow Squash - 1
Raw rice - 1 cup
Ginger grated - 1/2 inch
Coriander leaves - 5 strands
Salt to taste
Vegetable oil for cooking dosas
Jalapeno /Green chilli - 1/2 (optional)

Preparation
  • Wash and soak the rice for 30 minutes and drain them.
  • Peel the skin of squash and cut them into cubes.
  • Grind the soaked rice, squash, ginger, coriander leaves adding little water to form medium thick, smooth batter.(if you are adding jalapeno add it with the remaining ingredients while grinding) add salt and mix well.
  • Heat tava/griddle.Pour ladle full of batter and spread to form medium thin dosa. drizzle oil to the edges.cover it with lid. when its cook on one side, flip and cook on the other side. repeat the process for remaining batter.
  • Squash Dosa is now ready. Serve with butter / Jalapeno chutney and enjoy.
