BROCCOLI SOUP

Broccoli Soup is delicious soup prepared using broccoli,stalk and milk/cream as primary ingredients.
This soup is very creamy in texture. Try this nutritious, simple soup at home and do share your comments.
Preparation time : 30 minutes
Serves - 2 to 3 servings

Ingredients
Broccoli crown chopped - 1
Carrot - 1
Onion chopped - 1
Garlic cloves chopped - 3
Ginger chopped - 1/2 inch
Green chilis chopped - 3
Cumin seeds/Jeera - 1 tsp
Vegetable Oil - 1 tbsp
Vegetable stock- 2 cups (You can add 1 vegetable bouillon  cube to 2 cups of water)
Milk  - 1/2 cup
Corn flour - 1 tbsp
Cream - garnish (optional
Salt to taste

Preparation
  • Heat oil in pan. add cumin seeds and saute for few seconds, add onion, ginger, garlic, green chili , broccoli stems, chopped carrot and saute till translucent. Approx 4-5 minutes.
  • Add the broccoli crown and saute for 2 minutes.
  • Add 2 cups of vegetable stock and cook for minute to 10-15 minutes. Switch off the flame and allow to cool (until it is safe to puree in a blender).
  • Blend the above to a smooth paste.
  • Transfer this paste to the pan, check for seasoning (salt) and bring it to nice boil.
  • Dissolve 1 tbsp of corn flour in 1/2 cup of milk and add this to soup and keep stirring it and bring it to nice boil.
  • Broccoli soup is now ready. If you desire garnish the soup with cream and cheese. Serve hot and enjoy.
