DEEP FRIED KALE WITH INDIAN TWIST

Deep fried kale is delicious, crispy, spicy  recipe prepared with Indian twist. It can be served as snack or side with lunch/dinner. You will love the flavor, aroma and crave for more and more. Do try this out and share your comments.

Preparation time : 1 hour
Serves : 25 kale fritters

Ingredients
Kale - 3/4 bunch
Rice - 1 cup
Urad dal - 1/2 cup
Dry Red chilis - 7
Tamarind - small ball
Hing/Asafoetida - 1/2 tsp
Salt to taste
Oil for frying.

Preparation
  • Wash and soak the rice in water for 30 minutes and drain them.
  • Dry roast the urad dal in medium flame till they turn golden brown and grind them to form fine powder.
  • Wash the kale. pull off the leaves from the rib and finely chop them.
  • After 30 minutes grind the rice, tamarind, red chili, salt, hing with very little water to form smooth medium thick paste.
  • Mix this paste with the urad dal powder and add the finely chopped kale and mix everything well.
  • Heat oil in pan. make small balls, add them into oil ( 5 to 6 at time) and fry them in medium flame so that its cooked well inside and fry them till they turn crisp and dark brown in color.Transfer them into paper towel. This should take about 5 to 6 minutes. Repeat the process for the remaining dough.
  • Deep fried kale is now ready. Serve hot and enjoy.

Tip:
  •  To check  binding, just add one ball  in oil and if you feel its getting separated add  tbsp to 2 tbsp of rice flour and mix well.
  • If Kale fritters turn brown quickly it means oil is too hot and center of the fritter will remain uncooked. cool down the oil slightly
