MINESTRONE SOUP

Minestrone Soup is thick Italian soup made with vegetables, often with addition of some pasta. You can use any vegetables of your choice.Its perfect soup for all season. From the time I have prepared this soup its become our favorite soup. Its very healthy and tastes delicious. Do try this out and share your variations and comments.
Preparation time : 30 minutes
Serves : 3 cup

Ingredients
(Finely chop all the vegetables)
Tomatoes - 2
Garlic cloves - 5
Onion  - 1
Celery stick  - 1
Capsicum - 1/2
Green Beans - 6
Cabbage - 1/2 cup
Canned Great Northern Beans drained - 16 oz
Mushroom - 4 oz
Maggi veg cube/bouillon - 1
Olive Oil - 1tbsp
Black Peppercorn crushed - 5
Frozen green peas - 1/4 cup
Dried Basil leaves - 1 tsp
Dried Oregano - 1/4 tsp
Red chili Powder - 1 to 2 tsp(optional)
Parmesan Reggiano - garnish
Small shells Pasta  - 1/2 cup
Salt to taste

Preparation
  • Blend in food processor the  tomatoes and garlic to form thick paste.
  • Boil pasta according to instructions given and drain them.keep it aside.
  • Heat oil in pan. add onion and saute for a minute. then add capsicum, beans, celery, mushrooms, cabbage, green peas and saute for 1 to 2 minutes.
  • Add ground tomato garlic paste, water for desired consistency, bouillon, crushed peppercorn, basil leaves, chili powder, salt to taste and bring to nice boil and simmer for 10 to 15 minutes.
  • Now add great northern beans, pasta and cook for another 3 to 5 minutes. 
  • Minestrone soup is now ready.Ladle into bowl, Garnish it with Parmesan Reggiano, serve hot and enjoy
Tip:
  • I have used bouillon instead of broth.
  • Use any vegetables of your choice.
  • If you do not want to cook pasta separately you can add them while bringing the soup to boil.
