TENDER CASHEWNUT CURRY/BIBBE SONG

Tender Cashew nut also called bibbo in konkani is very famous in Mangalore/Udupi. Tender cashew nut curry or Bibbe Song is very famous , spicy, delicious konkani dish and can be served as side dish for lunch/breakfast/dinner. Do try this out and share your comments.
Bibbe songa
Preparation time : 30 minutes
Serves : 4

Ingredients
Tender Cashewnut - 1 1/2 cup
Onion chopped - 1
Tomato chopped - 1
Big Potato - 1
Red chili powder - 2 to 3 tsp
Coconut/vegetable Oil - 2 tbsp
Asafoetida/Hing -  big pinch
Salt to taste
Coriander leaves - to garnish

Preparation
  • Soak the tender cashewnut in hot water for 30 minutes. peel the skin of the cashew nuts and keep it aside.
  • Boil the potatoes and mash them or peel the skin of potatoes, cut them into cubes microwave for 5 minutes and mash them.
  • Heat oil in pan. add onion and saute till it becomes translucent. add tomato and saute till it becomes soft.
  • Add the peeled tender cashewnut,salt to taste, red chili powder,hing, 4 to 5 cups of water and bring it to nice boil in high flame for about 10 to 15 minutes.
  • Now add the mashed potatoes and boil it for another 3 to 5 minutes. Garnish it with coriander leaves.
  • Tender Cashewnut Curry/ Bibbe Song is now ready. Serve hot with rice/ dosa and enjoy.
Tip:
  • Amount of Chili Powder can be increased or decreased depending on how spicy you like the curry.
  • Amount of water can again be increased or decreased depending the consistency of the gravy you like to have with rice/dosa. I prefer medium thick consistency for this gravy.
