THAI RED CURRY RICE

Thai Red Curry Rice  is simple, delicious and spicy thai rice recipe prepared by using freshly ground red curry paste, vegetables and fresh basil leaves.This is very irresistible.I have prepared this using jasmine rice. You will simply love the aroma of this dish. Do try this out and share your comments.

Serves : 3

Ingredients
For the paste
Onion  roughly chopped  - 1
Garlic cloves - 5
Green/Red Bird chillies - 3
Ginger - 1 inch
Soya sauce -  1 tbsp
Lemon juice -  1 tbsp
Coconut milk - 5 tbsp
Red chilli- 6 to 8
Peppercorn - 8

For the curry
Carrot - 1
Capsicum - 1/2
Cabbagge - 1 cup
Tomato chopped - 1
Brown sugar - 1 tbsp
Salt to taste
Green peas - 1/4 cup
Fresh Basil leaves - 10 to 12
Tofu cut into cubes - 4 oz
Jasmine Rice - 1 1/2 cup
Red chili Powder -  1 tsp (optional)

Preparation
  • Cook the rice according to package instruction.I have added 2 basil leaves while cooking the rice to get fresh aroma.
  • Grind all the ingredients given in 'For the paste' together to form a thick thai curry paste.
  • In pan  add the thai curry paste and very little or no water and bring it to nice boil till the raw smell goes off.
  •  Now add carrot, capsicum, tofu, tomato, green peas one by one and cook for 2 minutes
  • Add basil leaves, sugar, salt to taste. If you want the rice to be very spicy add red chilli powder or chop green chilli lengthwise at this point. and mix everything well.
  • Add the cooked rice and toss till everything is well combined
  • Thai Red Curry Rice is now ready. Serve hot and enjoy.
