CHOLE ALOO RICE/ CHICKPEAS POTATO RICE

Chole Aloo Rice is healthy, delicious rice recipe prepared using chickpeas and potatoes. I always love rice/pasta recipes as they are easy to prepare and very tasty. Basic ingredients from your kitchen and its done! Chole is my all time favorite so I just thought instead of preparing two separate dish chole curry and rice/chapati why not try simple rice recipe out of it. And let me tel you its worth it and saves your time and is filling too.Do try this out and let me know your comments and variations.
I use jasmine rice for most of my rice recipes becomes I love the aroma of this rice. You can always use left over rice or basmathi rice for this recipe.
Chickpeas Potato Rice
Preparation time : 25 minutes
Serves : 3

Ingredients
Big Onion - 1
Big Potato - 1
Rice - 1 cup
Ginger grated - 1 tbsp
Dry Red chillis - 2
Cloves - 3
Cinnamon stick - 1/2 inch
Cardamon seeds - 3
Cumin seeds - 1 tsp
Brown sugar - 1/4 tsp
Garlic cloves - 5
Cashews - 1 tbsp
Salt to taste
Vegetable oil - 1 tbsp
Coriander leaves - 7 strands
Big Tomato finely chopped  - 1
Serrano Peppers/Green chillis - 2
Coriander powder - 1 tbsp
Turmeric powder - 1/4 tsp
Canned/cooked Garbanzo/Channa/Chickpeas - 1 cup
Tomato ketchup - 1/4 cup
Red chilli powder - 1 1/2 tsp
Garam Masala Powder - 1/2 tsp

Preparation
  • Boil the potato or cut them into small cubes and microwave for 3 minutes.
  • Cook the rice according to package instructions. I have used jasmine rice.
  • Heat oil in pan. add onions, cumin seeds, cardamom, cinnamon, cloves, dry red chilis and saute till onion is medium brown in color. for quick caramelisation add 1/4 tsp salt and sugar. keep  aside table spoon of this medium golden onion for garnish at end.
  •  Add ginger, garlic, chillis , tomatoes, coriander powder, turmeric powder and cashews and saute till tomatoes cook and fall apart.
  • Add cooked/canned chickpeas, tomato ketchup, red chilli powder, garam masala powder and saute for two to three minutes. Now add cooked potatoes and mix well.
  • Add the cooked rice, chopped coriander leaves and toss till everything is combined.
  • Chole Aloo Rice/ Chickpeas Potato Rice is now ready. serve hot and enjoy
