WHITE BEANS IN COCONUT GRAVY

White Beans In Coconut Gravy also called Tinaglore Bendi in konkani is very popular dish in Mangalore/Udupi. This is prepared using coconut and tempered with roasted garlic. This is very delicious and can be served with rice/ rottis/ dosas. You can always vary the amount of red chillis added as per your taste but the below recipe is medium spicy and just tastes awesome.
Tingalore Bendi

Preparation time : 30 minutes
Serves :  4

Ingredients
Dry White Beans/Great Northern beans - 1 cup
Asafoetida /Hing - 1/2 tsp
Garlic cloves - 8
Potatoes cut into cubes - 2
Vegetable/Coconut Oil - 1  1/2 tbsp
Dry Red chillies - 8 to 10
Coconut grated - 1 cup
Water - 4 cups
Salt to taste

Preparation
  • Soak the beans in water overnight and pressure cook along with potatoes adding water in medium flame for 2 whistles. See that beans is covered with water. If your using canned beans ignore this step.
  • Grind the dry red chillis, coconut adding little water to form thick smooth paste.
  • Transfer this ground mixture to pan and cook for 2 -3 minutes adding water. Then add the cooked beans and potato to it. You can use the same water that is used for cooking the beans.Add the hing powder.Bring it to nice boil. (consistency should be medium thick)
  • Meanwhile heat oil in pan. crush and add the garlic cloves and saute till it turns golden brown in color. add this to the gravy.
  • White Beans in Coconut Gravy/Tingalore Bendi is now ready. Serve hot and enjoy.
