SPICY QUINOA WITH BLACK BEANS

Spicy Quinoa With Black Beans is healthy, delicious lunch/dinner recipe prepared using quinoa, black beans and some spices. I have mixed red and traditional quinoa in this recipe and served with lettuce and sour cream.I just love the texture and the taste of quinoa.

Preparation time : 30 minutes
Serves : 3

Ingredients
Red Quinoa - 1/2 cup
Traditional Quinoa - 1/2 cup
Canned Black beans - 8 oz
Onion chopped - 1
Garlic cloves chopped - 5
Jalapeno chopped - 1
Vegetable oil - 1 tbsp
Cumin seeds - 1/2 tsp
Dry Red chillis - 2
Red Chilli Powder - 1 tsp
Cayenne pepper powder - 1/2 tsp (optional)
Black pepper powder - 1/4 tsp
Lime juice - 2 tsp
Tomato ketchup - 1 tbsp
Frozen green peas - 1 tbsp
Coriander leaves - 5 strands
Water - 2 cups
Salt to taste

Preparation
  • Heat oil in pan. Add cumin seeds and dry red chillis and saute for seconds.
  • Add onion, pinch of salt, garlic cloves and saute till it becomes light in color. Then add jalapeno and saute for few seconds.
  • Add red chilli powder, cayenne pepper, canned black beans, pepper powder, lime juice , tomato ketchup, green peas and mix well.
  • Now add quinoa, 2 cups of water and bring to nice boil. then cover it with lid and simmer for 15 minutes.
  • Spicy Quinoa with black beans is now ready. Garnish it with coriander leaves.Serve hot with salad and enjoy

  • Vary the spices as per your taste
