Double Chocolate Raspberry cookie is very soft, chewy, fudgy cookies stuffed with chocolate chip and raspberries.This is one of the best cookie I have prepared. The combination of chocolate and raspberry is amazing.I just can't stop eating it.

Raspberries - 6 oz
Semi-sweet Chocolate Chip - 1/2 cup
Cocoa Powder - 1/3 cup
Milk - 1/4 cup
Melted butter - 1/4 cup
All purpose flour - 3/4 cup
Egg - 1
Sugar - 1/4 cup
Vanilla Extract - 1/2 tsp
Salt - 1/4 tsp
Baking soda - 1/4 tsp

Preparation
- Chop half of each raspberries into halves and half of other raspberries into quarters.
- In stand mixer bowl add butter, raspberries chopped into quarters, milk, egg, sugar, vanilla extract, salt , baking soda and mix well.
- Now add the all purpose flour, cocoa powder and mix till it combined.
- Add the chocolate chip cookies and the raspberries chopped into halves, stir it well. Cover it and keep it in freezer for 30 minutes.
- Preheat the oven to 325 F. Grease the baking sheet with butter.
- Scoop 2 tablespoon of dough onto baking sheet, about 2 inches apart.
- Bake 10 to 12 minutes or until cookies are set , but it is still soft at center. do not overbake the cookies. remove from the oven and allow it to cool down for 10 minutes
- Double chocolate Raspberry Cookie is ready. Serve with cup of milk and enjoy.
