LEMON RICE

Lemon Rice also called chitranna is very popular South-Indian recipe that can be served for breakfast/lunch/dinner. You can use left over rice for this recipe. I must say this is one of the simplest and the best recipe for your lunch-box. I have served this rice with one of my favorite Jalapeno Snack
Rice recipes
Preparation time : 15 minutes
Serves :  2

Ingredients
Uncooked Rice - 1 cup / left over rice - 3 cups
Onion chopped - 1
Green chillis chopped - 2
Dry Red chillis - 2
Ginger grated - 1 inch
Mustard seeds - 1 tsp
Urad Dal - 1 tsp
Channa Dal - 1 tbsp
Broken Cashews - 2 tbsp
Lemon juice - 2 tbsp
Turmeric powder - 1/2 tsp
Curry leaves - 1 tbsp
Coriander leaves - to garnish
Salt to taste
Vegetable Oil - 1 tbsp

Preparation
  • Cook the rice according to package instructions. If you are using left over rice ignore this step.
  • Heat oil in pan. add mustard seeds and turmeric powder. when they start to splutter add urad dal, channa, dal, broken cashews, curry leaves, dry red chillis and saute till it becomes light brown in color.
  • Now add the onion, ginger, green chilli and saute till onion becomes translucent. you can add salt at this point.
  • Add the lemon juice and mix well. Now add the rice and mix till its very well combined.
  • Lemon Rice is now ready. Garnish it with coriander leaves. Serve and enjoy.
