INSTANT IDIYAPPAM/SHEVAI/RICE NOODLES

Idiyappam/Rice Noodles is popular breakfast recipe in South India which is in the form of thin noodles prepared using Rice. It is also know as string hoppers or Shevai in konkani. You need Idiyappam press or string hopper press to prepare this dish.
There are two ways in which it is prepared, one using Raw Rice which is lengthy process and the other one using Rice flour which is quick and easy. Today I am going to write quick recipe where in the rice flour dough is pressed into noodles form and then steamed.
This dish is one of my favorite since childhood. Serve this dish with any curry of your choice or even with jaggery, ghee, honey, pickle or coconut oil as per your taste. I have served it with batate songa.
Rice Recipes
Preparation time : 25 minutes
Serves : 6 Idiyappam

Ingredients
Coconut Oil/Vegetable Oil - 1 tbsp
Rice Flour - 1 cup
Water - 2/3 cup
Salt to taste
Sugar - 1/8 tsp

Preparation
  • Add water in pan along with salt and suagr and bring it to nice boil.
  • In another pan, add oil and rice flour and mix well. add the boiling water little by little and mix well using wodden spoon till the dough comes together.
  • Now Knead it well for atleast 5 minutes to form soft and smooth dough.
  • Shape the dough into log and place it in  Idiyappam presser/String hopper press.
  • Grease your idli moulds with Oil. Press dough through Idiyappam presser onto greased idli moulds. 
  • Add 2 cups of water in pressure cooker/steamer and heat in medium flame. I have used pressure cooker without whistle.
  • Steam it for 10 minutes on medium-high flame or until done.
  • Idiyappam or shevai is now ready. Transfer it to serving plate. Serve hot with any side curry of your choice and enjoy.
